As far as upgrades for a phantom go, phantoms are ready to go out of the box. You can go with an undercocking kit, a one piece feed from WWA. There are gonna be some new internals coming out that let you get 50 shots to a 12g, I don't know when they are, or a definete on if they are. You can bob your valve, you'll just get a couple extra shots to a 12g, but, you won't be able to shoot very fast. You can get a gauged valve that puts a gauge on the back of the valve to see what you have for air left. A trigger shoe, but they usually come with your marker. I'm gonna send mine out to get trigger stops done cause I know a guy who put them on my mag and I'm gonna do it to my phantom. And of course you can always get your phantom anodized.
That's theres my very unorganized blob of information. I'll work on the links for you.

Gauged valve (http://www.wevopaintball.com/pumppaintball.html)

There are a number of places to get your phantom anodized. I was gonna go through Magnum on AO and on PHOG, but I need a new marker for tournies first. Fireballmountain can do it, MAX Anodizing can. And the list goes on.

You realy don't need alot of ups on a pump. The Phantoms are good right out of the box. Figure out what set up you want, buy that one, and, you won't need to change anything. I bought a standard gravity fed pump with the Lonestart grip. I didn't like the grip and went with a .45, changed the body to a 10 rnd SC feed and a vertical ASA. I would have saved if I had broke down and bought it that way to begin with. THe ups above are nice, but, not needed to improve the performance of the marker.
Snipers and the like could use a barrel upgrade if they don't come with a descent barrel.
The low end markers (Trracer, Maverick, Hornet, ect) are ok out of the box and there aren't alot of things you can do for them.

I wouldn't go straight to stock class from semi play. Well not 12grams anyway, they're expensive too. I got introduce to pump play from a Spyder to a Trracer. I loved it. Later I got a CCM S5 pump, it's a sniper/autococker style pump. Like FT said, pumps don't need to be upgraded, just maybe a barrel. You'll really enjoy it, I sure do.
