Which one are you talking about... the first one? It's probably the same in all but you have to get your special meter full by doing tricks without wiping out, then it should be glowing blue or something. Then it'll be a combination of two directional buttons and another... like <-- --> O will be some grab trick. If you don't know what they are there is an option somewhere in the menu that let's you edit special tricks.
